I can sense that fall is over the horizon. Probably farther away than I'd like, but still, coming.

Gingerbread Bundt Cake

Printable Recipe

Mix together:
3 1/3 cups flour
2 ½ t. baking powder
1 ½ t. salt
1 T. ginger
1 ½ t. cinnamon
1 cup sugar

Add:
2 eggs, lightly beaten
1 cup molasses

Slowly add:
¾ cup plus 2 T canola oil
1 cup boiling water

Mix thoroughly. You'll need to scrape the sides and bottom of bowl.

Pour batter into a greased and floured 12-cup bundt pan and bake at 350 for about 50-60 minutes.

This is a dark cake. Let cool in the pan for about 10 minutes, then invert onto a serving plate. Sprinkle with powdered sugar before serving.

Holly's Note:
I wanted to do a gingerbread bundt cake for a bridal shower (we were serving different bundt cakes). I found the original recipe at
Pinch. I think this would be really good with vanilla ice cream or just real whipped cream. I served it sprinkled with powdered sugar.

Sounds lovely - do you have to use a Bundt pan?

Polly, probably not, but it certainly makes a lovely presentation!

Sounds delicious with powdered sugar on top. Mmm. How about a lemon glaze too? I'm definitely keeping this in mind for baking for my book club. Thanks.

I absolutely love gingerbread. The first thing I do when I see a gingerbread recipe is to see how much molasses is in it. If there's only a little bit, I skip right over the recipe. This one looks like it would have good molasses flavor.
