2 cups mashed bananas (about 4 medium, the riper the better)
3 eggs
1 cup oil
1 t. vanilla
1 cup white flour
1 cup wheat flour
1 cup sugar
1 t. baking soda
¼ t. salt
Combine bananas, eggs, oil and vanilla and mix well. Combine dry ingredients and add to banana mixture. Pour batter into greased pan and bake at 350 for 50-60 minutes or until done.
Makes 1 large 9 x 5 loaf or two smaller ones. You can also make muffins or mini-muffins. For the muffins, bake for 25 minutes.
Holly’s Note:
If you don’t have quite enough banana mixture, add ½ cup of applesauce. My family loves this.
