Chocolate Chip Mini Muffins

Printable Recipe

½ cup sugar
¼ cup shortening
1 egg
¼ cup milk
½ t. vanilla
1 c. flour
½ t. baking soda
½ t. baking powder
¼ t. salt
2/3 c. mini chocolate chips

Cream sugar and shortening 'til fluffy. Add egg, milk and vanilla. Mix well. Combine dry ingredients, gradually add to creamed mixture. Mix well. Fold in chocolate chips. Bake in mini muffin pan at 375 for 10-13 minutes or until done.

Holly’s Note:
These taste just like chocolate chip cookies but are quicker and easier to make. Great for after school snacks.
