So, health issues means my summer was taken up with recovery from surgery. Now that fall has arrived, I'm feeling better and anxious to try more new recipes from all these new cookbooks I've received!

Breakfast Muffins

1 1/2 cup flour
1/2 cup sugar
1 1/2 t. baking powder
1/2 t. cinnamon
1/4 t. nutmeg
1/8 t. salt
1 egg, slightly beaten
1/2 cup milk
1/3 cup butter, melted

In a mixing bowl, combine dry ingredients. Make a well in the center. Add egg, milk and butter. Stir until just moistened. Fill muffin cups about 2/3 full. Sprinkle a little cinnamon/sugar mixture on top. Bake at 350 for about 15-20 minutes or until done.

Makes 12 muffins.
