1/2 cup shortening
1 cup packed brown sugar
1 egg
1 cup milk
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
In a mixing bowl, cream shortening and brown sugar. Add egg, milk and vanilla. Combine the dry ingredients; add to creamed mixture until just combined. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400 for 16-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

This is our favorite Sunday morning muffin recipe. They are awesome. Easy to make and oh, so yummy. The original recipe came from a Quick Cooking magazine. My teenage son loves to whip up a batch of these. They're a great after school snack.
