Canning Season


So far this month I have canned salsa, tomatoes and blackberry jam.
 

I plan to do more tomatoes, when I pick them at my aunt's house this week.


I really want to do raspberry jam as it's my husband's favorite, but I have no friends or neighbors with raspberries.  I plan to plant some next year. However, there were vendors with raspberries at the farmer's market this week, and hopefully they will be back with more next week.


Local farmers sell corn at roadside stands here and I froze 96 ears of corn last year.  It still tastes as fresh as the day I preserved it. So yummy. I still have some, but not enough to get us through this winter.  So, I will pick up more.


I also plan to do onions.  There are some onion fields nearby where the farmers allow people to come in and glean after the harvest.  I haven't purchased an onion in a couple of years.  I chop and freeze most of it, but also keep some whole and in a cool place.  They last all winter.


I also plan on freezing peppers again this year.  I might try roasting some red ones first and then freezing.  We'll see what happens.

  1. I can, I just learned. I have done Corn Relish, Salsa and Strawberry Jam so far. I have some pears to make into pear jam but I have not had time to work on it just yet.

  2. Hi Holly! I stopped by your site via the Tasty Kitchen as we're friends there.

    I just made some raspberry jam today with berries that my youngest and I picked ourselves at a U-Pick farm about 45 minutes from our house. It is kind of far, and it was expensive, but we made a day of it together. We actually wanted blackberries, but they were finished already. :( So raspberry it was!

    I made one jar of easy refrigerator jam with golden raspberries and seven small jars of red raspberry jam that I canned.

    Earlier this summer I canned strawberry jam and these magnificent rum soaked cherries via a recipe at Tasty Kitchen.

    Last week, I made jars of pesto, but those get stored in the freezer.

    I also freeze red peppers for the winter and last year made a jar or two of roasted red peppers in olive oil, but kept one in the fridge for immediate use and froze the other one.

    I love preserving premium home or local farm grown food for the winter. It's so rewarding, isn't it?

    How do you freeze your corn? I may try that this year if I have the freezer space. 96 ears is amazing!!

  3. I want to learn how to can, but haven't found anyone to teach me yet, and I don't have the proper equipment. I do freeze things, but would love if you could share some instruction on how to freeze specific things. Like onions - do you just throw them in the freezer, chopped up? Or do you have to do something special to them? Peppers too - and do they come out mushy when you thaw them? I blanched some corn and froze it, but would love to learn more about food preservation, to save us money! :-)

  5. I never thought about freezing all that stuff? Do you chop up the onions and peppers first but leave the corn on the cob whole?
