Chocolate Andes Mint Cookies

Printable Recipe

  • 3/4 cup butter, softened
  • 2 T water
  • 2 cups chocolate chips
  • 1 1/2 cup brown sugar, packed
  • 2 eggs
  • 1 1/4 t baking soda
  • 1/2 t salt
  • 2 1/2 cups flour
  • 1 box Andes Mint Wafers
Cooking Directions
  1. Partially melt chocolate chips in butter and water.
  2. Pour into a mixing bowl.
  3. Add brown sugar, eggs, baking soda, salt and flour.
  4. Mix well and chill for one hour.
  5. Roll into balls, about 1 T in size.
  6. Bake at 350 for about 10-12 minutes.
  7. Remove from oven and place 1/2 of an unwrapped Andes Mint on each warm cookie.
  8. Swirl it as it melts.
A doubled recipe makes about 5 dozen cookies. You'll need one box of mints for each recipe.

Holly's Note:
I see a lot of recipes  like this one that call for chocolate cake mix. Cake mix cookies are convenient, but they're a cop out. Seriously. This one is amazing and really easy. Try it!

  10. Be still my heart - oh how I miss andies mints!! I've given up sugar for a little while... this looks so good! I'm pinning this to the official Celebrate Southern board! Cheers!

  11. Wonder how they'd be with a Hershey's Kiss on top. My kids don't like mint.

    1. I think they'd be great with a Hershey's Kiss. I think they'd be good if you took a Hershey's bar and broke it into pieces and just put a bit of plain chocolate on each cookie as well.

  12. Perfect for the chocolate/mint lovers. Thanks for sharing on Tasty Tuesdays.
