Beef Enchiladas

Printable Recipe
Serves 4-6

1 lb. ground beef
1 can refried beans or 1 cup cooked rice
1/2 cup diced onion
1 small can tomato sauce
1/4 t. Mrs. Dash Southwestern Chipoltle seasoning
1 can/jar red enchilada sauce (or one batch of homemade Red Enchilada Sauce)
10 flour tortillas
cheddar cheese

Brown the ground beef, drain and add onions, beans or rice, tomato sauce and seasoning. Stir together until well mixed. Place about 2-3 Tablespoons of beef mixture onto a tortilla, top with a spoonful of enchilada sauce and some cheese. Roll and place in greased 9 x 13 pan. Mix remaining enchilada sauce with the remaining meat mixture and pour over the top of the enchiladas. Sprinkle with cheese. Bake at 350 for about 30 minutes.

Serve with Spanish Rice, corn and salad.

Holly's Note:
This was another one of those recipes I just put together. I found several somewhat similar recipes online and then just concocted my own. These were yummy. Even my picky 8 year old said they rocked! Instead of refried beans, I like to add leftover Rice Pilaf, when it's been made with beef broth. It's a great way to stretch the ground beef, but it also adds flavor and texture.



Serve this with some Spanish Rice. Add a salad and vegetable. (We like corn with this.) And it's so much better with homemade Red Enchilada Sauce.  Try it!

Marinara Sauce

Printable Recipe
Makes about 2 cups of sauce


2 T. olive oil
1 small onion, chopped fine
2 garlic cloves, chopped fine
1 can (14 oz size or home canned pint) diced tomatoes
1 small can tomato paste
1 small can tomato sauce
1 t. oregano to taste
1-2 t. basil to taste
1/2 t. salt

Saute the onion and garlic in oil, about 2-3 minutes. Add the remaining ingredients and stir. Simmer about 30 minutes. Use in place of any meatless spaghetti sauce. This was fine for a 9 x 9 pan of shells. I'd double it for a 9 x 13 pan.

Holly's Note:
I happened to be out of pasta sauce and went looking for a homemade version that was similar. I modified a couple of recipes I found and came up with this version. It was pretty good. Is it cheaper than the $1 bottles of GV brand? I don't know. It was certainly easy to make and I had everything on hand and didn't have to run to the store. I will certainly use it in a pinch again.


I normally use the GV (Volde-Mart brand) Onion and Garlic pasta sauce with my Stuffed Shells recipes. If it's on sale, Ragu's Tomato, Onion and Garlic sauce is about equal in taste.
