Butterscotch Oatmeal Cookies




Ingredients
  • 1 1/2 cup flour
  • 1 t baking soda
  • 1/2 t salt
  • 1/2 t cinnamon
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar, packed
  • 2 eggs
  • 3 cups uncooked oats
  • 2 cups butterscotch chips
Cooking Directions
  1. In small bowl, combine dry ingredients.
  2. In large bowl, combine butter, sugar, brown sugar, eggs and vanilla.
  3. Mix well.
  4. And add oats and chips.
  5. Stir in dry ingredients.
  6. Bake at 375 for about 10 minutes.

Holly's Note:
My husband calls these cookies, "Food Heroin". They are his absolute favorite. I once made them for an office open house and they garnered me a marriage proposal!

Chicken Enchilada Soup

Ingredients
  • 1 (14 oz) can Red Enchilada Sauce
  • 1 (14 oz) can Green Enchilada Sauce
  • ~2 cups cooked chicken, shredded
  • 1 T Cumin
  • 1 T Chili Powder
  • 1 T Smoked Paprika
  • 1/2 T Garlic Powder
  • 1 (14 oz) can whole kernal corn (undrained)
  • 1 (14 oz) can black or kidney beans (drained)
  • 2 (14 oz) cans diced tomatoes (3-4 cups fresh diced tomatoes)
  • 1 can water
Cooking Directions
  1. In your crock pot, stir together all ingredients.
  2. Cook on low for 8-10 hours.
  3. Top with shredded cheese and whatever garnishes you like (sour cream, cilantro, etc.).
  4. Serve with tortilla chips.
Serves 6

Holly's Note:
I found the original recipe at  Eazy Peazy Mealz and immediately it sounded delicious. I modified the recipe like I always do and this recipe reflects my changes. I cooked some chicken and shredded it, but I didn't include the cooking as part of the recipe. I'd also use leftover cooked chicken another time.  I left out the coriander and I used more paprika and made it smoked paprika, not plain. I always drain my beans and used kidney, not black because The Doctor doesn't like black beans. I also used my homemade Red Enchilada Sauce but bought a can of green.   

This was a hit with my family. Easy, tasty and perfect for a wintery evening!

If you Give a Mom a Muffin

If you give a mom a muffin,
she'll want a cup of coffee to go with it.
She'll pour herself some.
Her three year-old will come and spill the coffee.
Mom will wipe it up.
Wiping the floor, she will find dirty socks.
She'll remember she has to do laundry.
When she puts the laundry into the washer,
she'll trip over shoes and bump into the freezer.
Bumping into the freezer will remind her she has to plan supper.
She will get out a pound of hamburger.
She'll look for her cookbook

The cookbook is sitting under a pile of mail.
She will see the phone bill, which is due tomorrow.
She will look for her checkbook.
The checkbook is in her purse,
which is being dumped out by her two year-old.

Then she'll smell something funny.
She'll change the two year-old.
While she is changing the two year-old, the phone will ring.
Her five year-old will answer and hang up.
She'll remember she was supposed to phone a friend to come over for coffee.
Thinking of coffee will remind her that she was going to have a cup.
She will pour herself some more.
And chances are,
if she has a cup a coffee,
her kids will have eaten the muffin that went with it.

Chocolate Vanilla Wafer Dessert

Ingredients
  • 1 box vanilla wafer cookies, crushed
  • 1/4 cup butter, melted
  • 3/4 cups butter
  • 2 squares unsweetened chocolate
  • 2 cups powdered sugar
  • 3 eggs, separated (whites together/yolks together)
  • 1/2 gallon vanilla ice cream
Cooking Directions
  1. Mix cookie crumbs with melted butter.
  2. Set aside 1 cup.
  3. Press remaining crumb mixture into the bottom of a 9 x 13 pan.
  4. In a double boiler, melt 3/4 cups butter and chocolate together.
  5. Stir.
  6. Add powdered sugar.
  7. Beat the egg yolks and add them to the chocolate mixture.
  8. Stir.
  9. Remove from heat.
  10. Beat the egg whites and fold into the chocolate mixture.
  11. Pour chocolate mixture over cookie crumbs.
  12. Slice the ice cream and place slices over the chocolate mixture.
  13. Sprinkle reserved cookie crumbs on top and freeze.
Holly's Note:
This is our traditional Christmas Eve dessert. My mom makes it every year and it is my favorite dessert. It's perfect for any time of year!
